I would have to add a few more to that list. I had both a Mac and PC back then, so Marathon is a needed addition. Rise of the Triad was fun as well, in addition to the aforementioned Heretic and Dark Forces series. And for a great survival horror shooter, Realms of the Haunting is a must.

I have to agree Doom and Doom 2 are one of the my favorite FPS games of all time.
Even to this day I play Doom Legacy mods and try challenging mod developed hells.
Also I have to say I wish Epic would go back to the original design for Unreal. Unreal two sucked because It took a turn towards military. Back when I played it on my 233 Mhz PC using a Voodoo Banshee Unreal 1 was amazing. For me it was because it revolved around a crazy alien planet with bad ass alien monsters and mysterious story of a mayan like race. That untraditional story and setting made the game worthwhile.
Also please bring back Heretic and Hexen. Heretic had nice gothic weapons and the ability to fly. Hexen I loved because of the crazy hellish puzzle and rooms where the ground would change before your very eyes. This reminded me of Hellraiser and thus I loved it immediately.
Btw the Star Wars game you are referring to is called Dark Forces.

Call me an Aspy, but I remember Goldeneye 007 being a huge hit for FPS. It brought a new face to the genre and made a strike for console gaming. I also feel that it was the first shooter to take a largely military style to the FPS style. The weapon's were many, and the gameplay was mostly realistic.
Many N64 fans will tell you that Goldeneye was their top game, when they weren't playing a Mario or (sadly) a Pokemon title, no matter how ugly it may have been. Goldeneye may not have been the breakthrough title of the 90s, but it was the start of something beautiful for the future of console gamers everywhere.
